Last weekend I worked at a Mini Show. It was called Mini takes the states. They started in LA and drove all over the states in a group.
The group of them arrived last weekend in Denver at Infinity Park.
I usually do not take a camera to work events on the weekend.
But, my Mom really wanted pictures of all the cars. If you want to see more pictures check out my flicker. Just click on any photo in my blog and it will bring you to my flicker account and you can see lots of Mini Coopers.

Pinky Mitts

Pinky Mitts

I love these mitts. I used two strands of yarn to make these. One was a sock yarn and the other was a Marble brand yarn.
I embroidered a sweet flower on them. They are a different pattern than I usually use called Toast.

Fingerless Mitts for Mom

Fingerless Mitts for Mom
Originally uploaded by whirledpeas00

I am quite obsessed with knitting fingerless mitts. I must have at least 6 pairs that I have knit for myself.
I keep knitting them for others. I am always trying to change the pattern to make the perfect pair. This yarn had a color change so the pair is not the same color.

Mothers Day Shawl

Mothers Day Shawl
Originally uploaded by whirledpeas00

I admit I was a little late finishing my Mothers Day Shawl. Here is my Mom in her new summertime shawl.
The pattern is from a Noro book and it called Sursa.
I hand knit it in a cotton yarn I purchased in Ohio when we lived there.
I saw another shawl pattern made in the Fiberworks (the LYS) when I lived in Dayton. It was made with the same cotton yarn. I thought when the yarn was knit up it was the perfect weight for a summertime evening wrap.

Easy Chicken Enchiladas

Easy Chicken Enchiladas
Originally uploaded by whirledpeas00

2 cans reduced fat condensed cream of chicken soup
1 cup sour cream FF
1 jar of Picante Sauce (used Pace Mild)
4 tsp. chili powder
4 cups chopped chicken cooked (I grilled it on the Foreman grill)
1 cup grated cheese (use what you like, I used WW grated)
7 Tortillas ( I used a low calorie brand, large size)
3 green onions (garnish)

Stir the soup not diluted, sour cream, picante sauce and chili powder
add chicken and cheese.
Fill the tortillas up leaving about 2 or 3 cups of filling to smother the top with. Sprinkle with extra cheese if you like and bake at 350 for 30 to 40 minutes covered. Garnish with green onions. I used a 9 X13 pan. I divided this up for my husbands lunches this week.
I made it with a rice side dish and corn.

I got the sprinkles at Bed Bath and Beyond.
